
I met with this marmalade about ten years ago after my marriage. So popular in my husband's region, Amasya in Turkey, I can easily say that I got married to this marmalade. But I feel no rejection at all..Because it is not an ordinary marmalade, a herbal remedy, a vitamin boost with A-C-D-E, and a perfect antioksidant. Delicious with its tangy, earthy flavour.
Try to find the "rosa rugosa" ones. They are more roundish looking, meaty, "easy going". Mine were "rosa canina" type. They look like cranberries and are as agressive as wild cats. I can still see this two species in this weather in the Northeast of England.
I throughly enjoyed this rosehip-marmalade journey... Smelled them in my spring walks, waited patiently until autumn, excited like a child when picking because of their jewel-like look. Next year I am going to try making rosehip-jam and dry them for herbal tea... But this time definitely the rugosa ones... Ouch, my hands still hurts...
Recipe: You don't need the exact amounts for the marmalade. Pick fruits, wash them with added vinegar, drain, put in a saucepan, fill with boiled water, mesh them using potato-mesher. When it turn into a paste, strain it twice, first from coarse,then fine sieves. Return to heat in a new saucepan, simmer until turn into a thick paste, add sugar. For 5 lt saucepan I added 1 cup, but you can add more. Then it needs a little more boiling. That's it...

ReplyDeleteKayınvalidem de az tatlı yapıyor, buzdolabında bile bozulabiliyor uzun durmaya gelmiyor, buzlukta saklıyoruz hep.
Allah göstermesin ona bir şey olursa kim yapacak bilmem, öğrenmek lazım.
Cok tesekkurler, bahcede kocaman bir Rosa Rugosa var ve ben bu marmelati kesin yapacagim. :) Recel ve cay icin de tarifleriniz varsa lutfen yaziniz. Bu arada gecenlerde Lakeland'da bir food dehydrator gordum. Onunla cok guzel kurutulabilirler sanirim cay yapma amacli olarak.
